Jacques Sorci, Director of Culinary
Chef Sorci has over 30 years of creating exceptional food and fine dining experiences. Having worked alongside exceptionally talented culinarians throughout his career, Sorci has amassed extensive experience in 5-star and Michelin star-rated luxury hotels and restaurants across the US and Europe.
Born in France, he completed his culinary education and training in France and Switzerland before moving to the US, where he now holds dual French and US citizenship.
Shawn Applin, Executive Chef
Chef Shawn Applin is an accomplished Executive Chef with over 20 years of experience, known for his innovative approach and refined palate. His culinary journey began in his grandmother's kitchen in upstate New York and was further shaped by his formal training at the Culinary Institute of America. Chef Shawn’s career has taken him to prestigious restaurants and hotels, showcasing his leadership and creativity, which have earned him recognition across the industry.
After leading culinary teams in Michelin-recognized hotels, Chef Shawn joined Chouette to develop the restaurant’s concept alongside French master Chef Jacques Sorci. His cooking style, defined by simplicity, seasonality, and integrity, continues to elevate the dining experience, where he remains dedicated to crafting exceptional dishes.
